These Keto pancakes are perfectly light and fluffy, plus easy to make and mess free. Enjoy them topped with your favorite sugar-free syrup and berries of your choice for the perfect breakfast. They are sugar free, low carb and gluten free , and diabetic friendly pancakes.
Ingredients
- 1 cup almond flour
- 2 eggs, room temperature
- 1/3 cup almond milk
- 2 tbsp monk fruit erythritol powder
- 1/2 tsp baking powder
- 2 tbsp olive oil or coconut oil
- Sugar free syrup
- Berries to garnish(optional)
Instructions
- In the bowl whisk eggs, coconut oil, sugar substitute, pinch of salt.
- Add sifted almond flour and baking powder to the egg mixture and fold in gently.
- Heat the skillet to medium heat , spray with oil . Spoon the batter into skillet , cover it and let it cook for 2-3 minutes. Flip them and let them cook for another minute.
- Serve them with powder sugar substitute, or sugar free syrup and berries of your choice.
