This easy Almond fruit cake is perfect for the holidays. It’s light, tender, and full of dried fruits, sprinkle the loaf with almond, or leave it out. This fruitcake is a welcome addition to the holiday table. Super easy and quick to make, no overnight soaking, but incredible delicious!
Ingredients
- 1 cup flour
- 2 cups almond flour
- 4 eggs
- 100 g butter
- 1/3cup sugar
- 1/2 cup almond milk
- 1/3 cup raisins
- 1/3 cup cranberries
- 1/3 cup dry apricot, diced
- 1/3 cup almond , thinly sliced
- 1/2 cup orange juice
- 1 tbsp vanilla extract
- 1 tbsp almond extract
- 2 tbsp fruit rum(you can skip it for kids) .
- Feel free to add any fruits you like
- 1 tbsp baking powder
Instructions
- Add all the dry fruits into the jar , add orange juice and rum ( skip the rum if serving to children), and let it soak for 30 minutes. Drain and pat dry.
- Preheat the oven to 350 °C/180°C
- In the mixing bowl whisk butter with sugar using mixer. Add eggs 1 at the time. Add vanilla and almond extract and mix again
- In separate bowl mix flour, almond flour and baking powder. Add to the wet ingredients and mix.
- Add fruit and mix with spatula. .
- Transfer the batter into 9×5 inch baking loaf pan, layer with parchment paper. Sprinkle with sliced almonds
7.Bake for 45-60 minutes, check with tooth pick for readiness.
8.Take out of oven and let it cool completely.
9.Sprinkle with powdered sugar and decorate as desire..
