Black Bean Quinoa Salad is an extremely easy salad to make, all while being packed with vital macro and micro nutrients. Compared to rice, quinoa has a higher protein to carbohydrate ratio as well as being gluten free. Mixed with spices, beans, and fresh vegetables, this salad combines the perfect amount of taste and nutrition. We recommend this as a side dish or a light meal earlier in the day.
Ingredients
- Salad
- 2 cups quinoa, cooked
- 1 can black beans
- 1 can corn
- 2 red peppers, diced
- 2 plum tomatoes, diced
- 1 red onion, diced
- 1 cucumber, chopped
- 1 avocado, chopped
- 1 bunch green onion, chopped
- 1/2 bunch cilantro, minced
- 1 garlic clove, minced
- Dressing
- 1 lime, juiced
- 1/4 cup olive oil
- 1 tsp salt
- 1/4 tsp cayenne pepper
Instructions
- In a large bowl, mix all of the salad ingredients together.
- In a small bowl, mix all the dressing ingredients together.
- Pour the dressing evenly over the salad. Mix well and serve.
