This Mango Avocado Salad is fresh, colorful, and full of flavor. Packed with sweet mango, creamy avocado, crunchy vegetables, and just a touch of lime, it’s like no other salad you’ve tasted. We recommend eating this salad with grilled meat or fish.
Ingredients
- 2 mangos
- 2 avocado
- 1 small red onion
- 1 red bell pepper
- 1/2 bunch cilantro
- 1/2 cup cherry tomatoes
- 1/8 jalapeno pepper
- 2 limes, juiced
- salt and pepper
Instructions
- Peel and chop the 2 mangos and place the pieces in a bowl. Cut the avocados into two halves and remove the pits. Cut the avocados into cubes while still in the peel and then use a spoon to transfer the avocado cubes into the bowl.
- Chop the small red onion, bell pepper, cilantro, and cherry tomatoes. Cut off a small piece of a jalapeno pepper and mince enough for 1/4 tsp of it. Add all of these ingredients into the bowl of mangos and avocados. Mix well.
- In a small bowl whisk the lime juice with your preferred amount of salt and pepper. Pour this over all the ingredients and mix well. Place the bowl in the fridge for 15 minutes and then serve with chicken, fish, or by itself.
