These Puff Pastry Baskets are crunchy and go very well with this wonderful light cream. It is so tender, airy, sweet and delicious! I garnished them with the fresh berries. You can use your favorite fruits. They gave the taste of freshness and a slight acidity. They balance out the taste perfectly.
Ingredients
- 1 package puff pastry dough, thawed
- 16 oz whipped cream
- 1 egg
- strawberries
- blackberries
- kiwi
- fresh mint leaves
Instructions
- Lay thawed pastry on the flat surface. Use two circular pastry cutters – one a little bit smaller than the other. Using the large one, cut out 9 circles in one of the puff pastry sheets. Then, using the same large pastry cutter, cut out nine large circles in the other pastry sheet as well. Then, using the smaller one, cut circles into the circles already cut out. Use scraps from dough cut stripes for forming handles for baskets
2.Using a brush, brush some egg onto the bottom of the circle with a “hole” and place it on the larger circle. Repeat until you have circles on top of circles. Pock middle of basket with fork. Brush the tops with egg wash and bake at 400 degrees for 15 to 18 minutes. As these bake, they should rise up, forming baskets.
3. While the baskets are baking prepare berries and wiped cream.
4. Take out pasties from oven, let them cool.
5. Press meddle of baskets in. Add whipped cream, and decorate with berries and feesh mint.
6. Secure handles with tooth pick to the baskets
